December 17th, 2005 by coolblognameSo, I wonder why people underestimate me. I mean, really…it’s not that difficult to read a recipe and follow directions. "JEN made THIS?" Well, yeah I did. I can actually do something other than fetch coffee and make copies. Who knew?
Chicken Satay (serves 12)
2 tbs. creamy peanut butter
1/2 c. soy sauce
1/2 cup lemon or lime juice
1 tbsp. brown sugar
2 tbsp. curry powder
2 cloves garlic - chopped
1 tsp hot pepper sauce
6 skinless, boneless chicken breasts - cubed
1. In a mixing bowl combine all ingredients except for the chicken. Stir until smooth. Add chicken to marinade and refrigerate for at least 2 hours.
2. Preheat grill to high heat
3. Weave chicken onto skewers and grill for 5 minutes on each side.
See…it’s not a difficult recipe. I broiled mine rather than grilling since it’s 2 degrees outside, but it’s still not that tough. You can also add green and red peppers and onion wedges before grilling to make it look pretty. Serve over saffron rice or really any rice would do.
